Some people play orcs as being a little smaller than humans, I like to run them as 1 hit die plus 1, average about 6'6" and about 280 lbs, very muscular and a max of an 11 INT. Fierce fighters, but a bit on the cowardly side, so if the numbers are close you may be able to bluff them; however, if they out number you at 2 to 1 or better they are highly likely to attack even if they negotiate/talk/trade first. Evil monsters will only keep a truce for as long as it benefits them and lying is a way of life for evil monsters.
Female monsters are every bit as dangerous as the males and young monsters (they are not children) are also dangerous, deceitful and deadly. They may try to look cute (ugh) and helpless, but let players turn their backs on them and see what happens. Play them that way and your players will not be involved in unnecessary moral/ethical dilemmas about destroying evil.
All goblinkin and giantkin are mutually fertile although huge size differences require magical assistance. In general the more experienced and powerful the party becomes the more often they should encounter Tuckerized monsters.
Orcs like goblins, kobolds hobgoblins and gnolls will die in full sunlight or from a "Continual Light" spell in a intense fast burning fire.

I picture orcs as shown in the 1e MM.
Human size, pig faced, and carrying pole-arms. They generally work for wizards or haunt dungeons.
I don't like great-big, muscle orcs - they're the comic relief of the monster list.

Physically speaking I tend to have a lot of variety in orcs both in appearance and size. I see their general build as ape-like - short, bandy legs, long arms, the biggest are still shorter than humans but can be much stronger.
Not that I've used orcs in my games for many years. Goblins and hobgoblins fill that niche for me.

Orcs – They divide themselves into numerous tribes spread across the world, warlike, cruel and bloodthirsty, almost as intelligent as men but due to their nature they do not progress very much. They are low in wisdom and are content to live on the spoils of war. They will negotiate and but rarely keep their agreements, there are times when the can be traded with, but watch your back. They live in villages and caves. They are not pig faced, but do have a very prominent long jaw and a sloping forehead. When large numbers of them arise they will form into armies that march on the nearest civilized area to burn and pillage and reclaim territory for themselves. Orcs average about 6 1/2 feet in height.
