What you think you know:
Most monsters are Chaotic and probably evil to boot.
The reality:
Although the above is a given in this game, there are caveats. 1. All monsters with some exceptions value their own lives and will not want to fight anymore than you do unless they think they can quickly overwhelm you or they think you are too timid to fight effectively. 2. Since monsters value their own skins, they may be bluffed or bribed or negotiated with. 3. Some monsters will ally with you against a common enemy (but beware the backstab). 4. Trolls are mindless eating machines so fight, avoid or flee. (old trolls can be very intelligent, that only makes them more dangerous not less) 5. Beholders are insane and they are evil, don't let them ambush you. 6. 7. 8. 9. 10.

More information about the above with more nuance.
In OD&D Lawful does not always mean good and Chaotic does not mean evil. In my game, Lawful, Neutral and Chaotic are Alignments. Good and Evil are a separate thing of character.
An Evil High Priest and a Chaotic Cleric in OD&D are not the same thing. Some things are always Evil, and might have any alignment. Some things are always Good and those are things are always Lawful.
Alignment is not a straight jacket that dictates behavior, it tells you the direction that each creature leans, how trustworthy (or not) they might be, etc. However, behavior over time can lead to alignment changes.
Behavior though, does not only confirm or deny alignment, behavior also informs the other facets of a creatures character. Some behavior is Evil, so someone presenting as Good might be found out to be Evil.

Could someone presenting as Evil be found out to be Good? (serious question, is it possible in this world?) That would be a rare thing indeed, difficult, but not impossible. Very difficult to present as Evil without actually being Evil.
