Geletinous/Gelatinous Cubes - Underground creatures of near complete transparency which fit exactly the typical corridor of a dungeon. Metal objects absorbed into them would be visible thereafter within their body. These monsters would be difficult to harm and have a large number of Hit Dice.
As I play them they are 10'x10'x10' in size, they weigh about 70,000 lbs (35 tons), they are not intelligent, but do have a keen sense of smell and will pursue food through unobstructed opening as small as 18 square feet. They move at 3". They can not be harmed by normal weapons, but can be harmed by fire and by lightening and magical weapons. Once every so often depending on food sources, then will expel up to a hundred - 1 inch cubes which will explore every nook and cranny as they feed and grow. At this size they can pass through opening as small as 1/32 inch in diameter. It is rumored that should one escape a dungeon that it would not be any natural limit to its size. There are also rumors that their intelligence grows as they do.

I love to use Gelatinous Cubes, sometimes in multiples. One of the ones that was a lot of fun was when they encountered one in the wilderness that had either escaped from or was released from a dungeon into the wild. Instead of the normal 1000 cubic feet it was over 50,000 cubic feet and growing steadily. They had a really rough time of it, since as it got bigger it had achieved sentience and a steadily growing level of intelligence. In the process of killing it they started a forest fire that burned for 2d20 days (32 days in this case).

What have you done with a Gelatinous Cube outside of it being part of he cleaning crew in the standard dungeon corridor? Anyone have something to share that they did that threw their players for a loop?
