Who is subject to the curse of vampirism? Only Humans? How about Elves? Or Dwarves? Or Hobbits? Or other Humanoids? How about Giants? How about other sentient creatures?

IMO only Humans can become vampires.

I would say that Humans and Hobbits can both become vampires. They are more closely related than any of the others to Humans.

I got vampiered out a wile ago, but I like "monster" type vampires. They spread slowly and deliberately. Any roughly human sized being can be turned so I pick other.

How about this:
only humans among sentients are subject to it. But lower animals (bats, dogs) can have non-immortality vampirism, somewhat like rabies. But once it hits a human or is transferred from one human to another, it's regular vampirism.

The first five, plus giants and titans. There is a minimum intelligence requirement for a vampire and the creature must have a soul and in my campaign, all of the ones I picked do.
