One item you won't find in a real market town is a stationary: a book, or a paper store. The equipment is too big and the wears don't do good in the weather, so they required "a stationary shop". Typically, they would be manned by a family unit team. Usually, the wife would do the color and illumination and the husband would do the writing or copying.
The Romans would have fast food joints in the marketplace. They had a countertop oven with pictures of the food as a menu. Pork and fish appeared on the menu, but some of these depicted wolves. It's uncertain if they actually served "wolf" or if it was a fantastic description of very spicy food or something unique to the establishment.
One of my favorite books, Myth Adventures has a send-up on this concept. I forget the name of the restaurant but it's basically McDolands and the characters know that they are coming close to some sort of trademark infringement in the description of the place. It's ok, most of the characters are criminals.
I'd name one of these restaurants, "Circle of Thieves". Needless to say, it's a lot more expensive than you would think.
In my campaign, I have a location called "The Highback Booth". It's an old bar converted to a temple. It leans on the four wall very hard as we have a church in town that is an old converted bar.

-woven bowls and baskets: all things woven from wicker, twigs and reeds, from baskets to hold fish to backpack like constructions to hold load and firewood to cages for small animals and for fishing. -Ladders and poles; all thing made out of rods and sticks, 10; poles, ladders fishing rods, staffs sticks -Glassblower: vials, bottles, vases, magnifying glasses, glass sculptures -Pottery: pots, vases, vials, amphoras -beekeeper: honey, beeswax, beeswax candles -candle maker: candles, candle-wax for stamps, time candles, lanterns -letter writer: will write letters for the unlettered, might have knowledge of letters written for past clients -icons, wards and symbols: need anything to ward of the evil eye, protect you homestead from rampant gnomes, turn ghouls? this person has it or can carve it by tomorrow -mushrooms: mostly edible, some have special abilities -Stuff found by someone digging up stuff from the local ancient battleground
