For those who have run a PbP: what is the necessary pace? Is it possible to have a "slow" game where people post regularly, but slowly?

There are different preferences. The best way to approach posting frequency is to make a notice detailing how often you intend to run turns and see if you get any nibbles. If you get a lot of "I'd love to play but only once a week is too slow" or "three times a week is too often" you might consider tweaking it a bit. For me, as a referee, three turns per week is the sweet spot.
I'd advise settings the frequency at what you, the referee, are comfortable with running. If you are not engaged they will not be engaged, after all.

Just from observation, I think a fast pace where everyone logs in daily would be a lot of fun, but in practice I think a slow game is pretty normal. Our Traveller pbp has persevered through some pretty slow stretches, but as I reader I have really enjoyed it.
